Oshizushi is a traditional pressed sushi format from Osaka. We make it from seasoned Chinese rice, a layer of fresh salmon, smoked eel and avocado. We add a little green masago roe and green onions for texture and brightness. Spicy sauce adds piquancy, making the presentation rich and balanced.
